🥘 Ingredients for Lauki Paratha:-
Whole wheat flour – 2 cups
-
Bottle gourd (lauki) – 1 medium, grated
-
Green chilli – 1 finely chopped
-
Cumin seeds – ½ tsp
-
Turmeric powder – a pinch
-
Garam masala – ¼ tsp
-
Fresh coriander – 1 tbsp chopped
-
Ghee or oil – for frying
-
Salt – as per taste
-
Take 2 cups of whole wheat flour in a large bowl.
-
Add a pinch of salt and mix well.
-
Add water slowly and knead into a soft dough. Add a few drops of oil and let it rest for 15-20 minutes.
-
Wash and grate the lauki (bottle gourd).
-
In a pan, heat 1 tsp ghee and add cumin seeds.
-
Add green chilli and sauté briefly.
-
Add grated lauki, a pinch of turmeric, and salt.
-
Cover and cook on low flame until the moisture evaporates and lauki becomes soft.
-
Add garam masala and chopped coriander, mix well and let the mixture cool.
-
Take a small portion of the dough and roll it into a ball.
-
Flatten it and place 1–2 tsp of the lauki stuffing in the center.
-
Carefully bring the edges together to seal the stuffing.
-
Gently roll the stuffed dough into a round paratha using light pressure.
Pro Tip: If the stuffing starts coming out or you're a beginner, roll out two thin chapatis, place stuffing between them, seal the edges well, and roll again slightly to shape it.
4. Cook the Paratha-
Heat a tawa or skillet on medium flame.
-
Place the rolled paratha and roast both sides until golden brown, applying ghee or oil as needed.
-
Flip and press gently to ensure even cooking and crispy texture.
Serve the crispy lauki paratha hot with green chutney, curd, or tomato sauce. You’ll be amazed at how tasty and nutritious it is. It’s an ideal breakfast option and also works great in lunchboxes for kids.
