While preparing any recipe of bitter gourd, if one spoon of lemon juice is added to it, then its bitterness goes away. If you are preparing bitter gourd bhujia, then after preparing it, before taking it out, add one spoon of lemon juice to it and mix it well. The sourness of lemon reduces the bitterness of bitter gourd.
Tamarind water can also be useful for this. Adding tamarind juice to bitter gourd vegetable, stuffed bitter gourd or bitter gourd bhujia also removes its bitterness. But keep in mind that adding more tamarind juice will make it taste sour. If both these methods are adopted then the bitterness of bitter gourd will not spoil your taste.
